Is it the right knife?
The Aiko 9.3" chef knife. Our longest all-rounder.
A 9.3" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. Extra length for big batches and large cuts.
- 9.3" blade for meat, fish and veg
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the 9.3" chef knife if you cook in big batches or like a longer blade. The extra length slices through roasts, squash and cabbage in fewer strokes.
Is it the right knife?
The Aiko nakiri. Built for vegetables.
A 6.7" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. A flat, straight edge that meets the board along its whole length.
- 6.7" flat blade for fast vegetable prep
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the nakiri if you cook a lot of vegetables. The flat edge cuts all the way through in one push, with no half-attached slices, and the tall blade scoops prep off the board.
Is it the right knife?
The Aiko 8" chef knife. One knife for almost everything.
An 8" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. The classic size for chopping, slicing and dicing.
- 8" blade for meat, fish and veg
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the 8" chef knife if you want one knife for most jobs. It is the size most home cooks reach for, long enough for big prep and easy to control.
Is it the right knife?
The Aiko bread knife. Crust without the crumbs.
A 7.6" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. Saws through crusty loaves and soft tomatoes without crushing either.
- 7.6" serrated blade for bread, cakes and tomatoes
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the bread knife if you buy or bake proper loaves. The serrations bite into crusts cleanly and leave soft crumb and cakes in shape.
Is it the right knife?
The Aiko cleaver. Big blade, big prep.
A 7.5" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. A tall, wide blade for heavy prep.
- 7.5" tall blade for heavy vegetable and meat prep
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the cleaver if you prep large vegetables or boneless meat in big batches. The weight does the work, and the wide blade scoops prep off the board. Not for bones or frozen food.
Is it the right knife?
The Aiko santoku. Slice, dice and mince.
A 6.7" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. The Japanese all-rounder, shorter and flatter than a chef knife.
- 6.7" all-round blade for meat, fish and veg
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the santoku if you want a lighter, more compact all-rounder. Its flatter edge suits straight up-and-down cuts, and it feels nimble in smaller hands and kitchens.
Is it the right knife?
The Aiko boning knife. Close to the bone.
A 5" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. Narrow and precise, for working around joints and bones.
- 5" narrow blade for meat and fish prep
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the boning knife if you joint chicken, trim meat or fillet fish. The narrow blade follows the bone closely, so less goes to waste. Not for cutting through bone itself.
Is it the right knife?
The Aiko utility knife. The in-between job knife.
A 4.3" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. Bigger than a paring knife, nimbler than a chef knife.
- 4.3" blade for sandwiches, cheese and herbs
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the utility knife for the everyday jobs in between, like slicing sandwiches, cheese, shallots and herbs, when a chef knife feels like too much.
Is it the right knife?
The Aiko paring knife. Small knife, fine work.
A 3.2" VG10 Damascus blade, 67 layers of stainless steel with a feather pattern, on a stabilised burl wood and resin handle. The small knife you reach for when a big one is too much.
- 3.2" blade for peeling and fine detail
- VG10 Japanese steel, 67-layer feather Damascus
- Burl wood and resin handle, every one unique
Best for
Choose the paring knife for peeling, trimming, hulling and garnishing, the detail jobs a bigger knife is too clumsy for. A natural partner to a chef knife or santoku.

The steel
Why VG10 Damascus?
Every Aiko blade has a precision-forged VG10 Japanese steel core wrapped in 67 layers of Damascus, so it takes a keen edge, holds it, and wears the feather pattern that makes it unmistakable.

Damascus steel folded around the core for strength, stain resistance and the feather pattern.
-
VG10

A high-carbon stainless steel prized for taking a fine edge and holding it.
