    blank

    • Pan drippings

    • 2 tbsp all-purpose flour

    • 1–2 cups chicken or turkey stock

    • Salt and pepper to taste

    Directions

    1. Preheat your oven to 325°F (163°C). Remove the neck and giblets from the turkey cavity. Pat the turkey dry with paper towels.

    2. In a small bowl, mix butter, olive oil, minced garlic, rosemary, thyme, sage, paprika, salt, and pepper.

    3. Loosen the turkey’s skin by gently sliding your hand underneath it. Spread half the butter mixture under the skin and the rest over the turkey's exterior.

    4. Fill the turkey cavity with onion, lemon, garlic, and herb sprigs.

    5. Place the turkey on a roasting rack inside a large roasting pan. Tie the legs together with kitchen twine and tuck the wings under the bird. Roast for approximately 13–15 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast and 175°F (80°C) in the thigh.

    6. Every 30 minutes, baste the turkey with pan drippings to keep it moist and flavourful.

    7. Remove the turkey from the oven and tent it loosely with foil. Let it rest for 20–30 minutes before carving.

    8. Place the roasting pan over medium heat and scrape up browned bits. Whisk in flour and cook for 1 minute. Gradually add stock, whisking until smooth. Simmer until thickened, then season with salt and pepper.

    10 Cooking Tips

    1. Thawing: If frozen, thaw the turkey in the refrigerator. Allow 24 hours per 4–5 pounds.
    2. Dry the Turkey: Patting it dry ensures crispy skin when roasted.
    3. Herb Butter: Spread butter under the skin for maximum flavour and moisture.
    4. Resting is Key: Letting the turkey rest ensures juices redistribute, making the meat tender.
    5. Use a Meat Thermometer: Ensure accurate internal temperatures for perfectly cooked meat.
    6. Don’t Skip the Gravy: The pan drippings are a goldmine of flavor.
    7. Foil Hack: If the skin is browning too quickly, tent the turkey with foil during roasting.
    8. Experiment with Stuffing: Aromatics like citrus and herbs infuse the turkey with subtle flavours.
    9. Elevate with a Rack: Roast the turkey on a rack to ensure even cooking and prevent soggy skin.
    10. Prep Ahead: Mix the butter and chop herbs a day in advance for a smoother cooking process.
