Is it the right knife?
The Minato santoku. Slice, dice and mince.
A 7" AUS10 Japanese steel blade, hand-finished to a 15° edge, with a warm rosewood handle. The Japanese all-rounder — shorter and flatter than a chef knife, for clean, precise cuts.
- 7" (17.8cm) all-round blade for meat, fish and veg
- Three-layer AUS10 steel at 60±2 HRC
- Rosewood handle, sealed in wax for a secure grip
Best for
Choose the santoku if you want a lighter, more compact all-rounder. Its flatter edge suits straight up-and-down cuts, and it feels nimble in smaller hands and kitchens.
The steel
Why AUS10 steel?
Every Minato blade is AUS10 high-carbon steel in a multi-layer build, so it takes a keen edge, holds it, and shrugs off everyday kitchen work.
-
AUS10
High-carbon steel
A Japanese high-carbon stainless steel known for taking a fine edge and holding it.
-
60±2
HRC hardness
Hard enough to stay sharp for longer, tough enough for daily prep.
-
15°
Edge angle
Hand-finished to a finer edge than most Western knives, so it glides through food with less pressure.
-
Hammered
Blade finish
The dimpled finish helps stop food sticking to the blade and gives every knife its look.

Good to know
Which Minato knife should I start with?
Most people start with the 8" chef knife: it handles meat, fish and veg. Prefer something lighter and more compact? Choose the 7" santoku. Kitting out a whole kitchen? The 5-piece set and the sets with a magnetic block work out cheaper than buying the knives one by one.
Can it go in the dishwasher?
No. Hand wash and dry it straight after use to keep the edge sharp and the rosewood handle looking its best.
How long does delivery take?
Shipping is free worldwide on every order. Most orders arrive within 7–10 business days; remote areas can take a little longer.
What if it’s not right for me?
You have 180 days to return it, as long as it's complete, undamaged and in its original packaging.
Is there a warranty?
Yes. Every Minato knife is covered by our lifetime warranty.
